Spicy Peanut Furikake

Furikake is a Japanese seasoning usually sprinkled on cooked rice and vegetables.

Our spicy peanut furikake contains roasted peanuts, nigella seeds, sesame seeds, soft brown sugar, sea salt, togarashi (Japanese 7 Spice) and ground Irish laver (sleabhac / nori). It is spicy, crunchy, salty, nutty, earthy with a slight briny-ness from the seaweed.

When I was formulating our recipe the idea of importing nori from Japan when we have 900 miles of coastline on the island of Ireland seemed a bit crazy. Then I discovered that laver or sleabhac is very similar to Nori in taste and texture. It is a nutritional powerhouse, containing so many vitamins, minerals and lots of chlorophyll too! It is harvested and dried by Manus at Quality Sea Veg in Donegal, then sent across to us in Belfast to add to our furikake.

Other Furikake recipes sometimes contain katsobushi (dried bonito flakes) but ours doesn’t - it is vegetarian / vegan friendly.

Fantastic on rice, vegetables, eggs, mushrooms, sprinkled over chips with some Burren Balsamic white balsamic vinegar.
